The Ultimate Maitake Burger

Built on our signature Maitake Super Mushroom Patty, packed with real maitake mushroom, pea protein, and beta-glucans, then layered with smoky chipotle plant-based mayo, melty plant-based cheese, and crisp garden-fresh toppings. This is the burger that fuels you, not inflames you.
The Patty
1 Mushroom Squared Maitake Super Mushroom Patty (any variety: Cognitive Harmony, Gut-Heart Balance, or Metabolic Wellness)
The Bun
1 wheat burger bun with sesame seeds (wheat flour, sesame seeds, sugar, yeast, vegetable oil)
Chipotle Mayo (Plant-Based)
1–2 Tbsp plant-based chipotle mayonnaise (safflower oil, pea protein, apple cider vinegar, mustard, lemon juice, soybean oil, sunflower lecithin, chipotle pepper, paprika)
Plant-Based Cheese
1 slice plant-based cheese (oat flour, coconut oil)
Seasoned Onions
¼ cup sliced onion, pinch of black pepper, 1 small bay leaf, salt to taste
Fresh Toppings
1–2 romaine lettuce leaves, 2–3 slices plum tomato, 3–4 dill pickle chips
Step 1: Pan-Sear the Patty to Golden Brown
Place a lightly oiled skillet over medium heat and cook the Maitake Super Mushroom Patty directly from frozen, searing 4-5 minutes per side until a beautiful golden-brown crust forms on both sides. The patty should be hot throughout with an internal temperature of at least 165 °F. Keep the patty warm. This burger is at its absolute best served fresh off the pan.
Pro tip: Pan-searing is the key to this recipe. It delivers the crispiest, most flavorful crust.
Step 2: Prepare the Seasoned Onions
While the patty cooks, sauté sliced onions in a small pan with a bay leaf, a pinch of black pepper, and a touch of salt over medium-low heat until softened and lightly golden, about 5–6 minutes. Remove the bay leaf before assembling.
Step 3: Melt the Plant-Based Cheese
During the last minute of searing, place a slice of plant-based cheese on the patty and cover the pan briefly until melted.
Step 4: Toast the Bun
Split the sesame wheat bun and lightly toast it cut-side down in the same pan (or under a broiler) for about 30–60 seconds until warm and just golden.
Step 5: Spread the Chipotle Mayo
Spread 1–2 tbsp of plant-based chipotle mayo on both sides of the toasted bun. The smoky, slightly spicy kick is what ties the whole burger together.
Step 6: Stack & Serve Warm
Build your burger with crisp romaine, a warm golden patty with melted cheese, seasoned onions, plum tomato slices, and dill pickle chips. Top with the bun and serve while warm.
Pro tip: Speed is your friend. The contrast of a warm, pan-seared patty against cool lettuce and tangy pickles is what makes this burger unforgettable.
