Since 1983, our parent company Mushrooms and More has been delivering fresh gourmet mushrooms to over 100 of New York City’s top restaurants. Three trucks, every morning at 4am, carrying up to 30 varieties of mushrooms to chefs who demand the best. Michelin-starred kitchens. Neighborhood favorites. The kind of places where ingredients matter.
After four decades in the wholesale mushroom business, we asked a simple question: why should only restaurant chefs get access to real, high-quality mushroom products?
That’s where Mushroom Squared comes in.
What it is: Mostly Maitake mushroom + pea protein patty (13–14 g protein). A healthy, premium patty or add-on to make any meal more diverse, tasty, and GLP-1-diet friendly. Think: “throw it on a salad,
rice bowl, or breakfast hash.”
What it’s NOT: A beef replacement.
We take real, whole maitake mushrooms — sourced from GFSI-certified suppliers — and turn them into frozen patties you can cook at home in minutes. More than 50% of every patty is whole mushrooms. The rest is texturized pea protein for structure and protein, apple cider vinegar for food safety and gut health benefits, and rowan berry extract for natural preservation.
We wanted to make a mushroom product that actually tastes like mushrooms, with a clean ingredient list you can read in one breath. So we did.

When you supply Michelin-starred kitchens, you can’t cut corners. That standard carries over to everything we make.
Our mushrooms come from suppliers with Global Food Safety Institute (GFSI) certification. We’re currently completing our own SQF (Safe Quality Food) audit. Every ingredient is tracked, tested, and held to the same bar we’ve maintained for 40 years.
We don’t grow our own mushrooms — we source from the best. Just like we’ve always done for the restaurants we serve.
Honest ingredients. If it’s in the patty, it’s on the label. If it’s not on the label, it’s not in the patty.
